Rustic Carrot and Goat Cheese Tart

With BrixCo Maple Syrup Glaze

Ingredients

For the Carrots

  • 5–7 small to medium carrots (preferably rainbow carrots), peeled
  • 2 tbsp olive oil
  • 2 tbsp BrixCo maple syrup
  • 1 tsp fresh thyme
  • ½ tsp fine sea salt
  • Freshly ground black pepper, to taste

Goat Cheese Spread

  • 100 g mild goat cheese
  • 2 tbsp plain yogurt or sour cream
  • 1 tsp lemon zest (optional, but highly recommended)
  • Salt and pepper, to taste

Pastry

  • 1 all-butter puff pastry sheet, thawed but still cold
  • 1 egg, beaten with 1 tsp water (for egg wash)

To Finish

  • A few maple-glazed pecans (optional, but highly recommended)
  • A few extra thyme leaves
  • A drizzle of BrixCo maple syrup, for serving

Instructions

1. Preheat the Oven

Preheat the oven to 200°C (400°F).

2. Roast the Carrots

Pre-roasting allows the carrots to become tender and lightly caramelized while the pastry finishes baking.

  1. Slice the carrots lengthwise (leave the thinnest ones whole if desired).
  2. In a bowl, toss the carrots with the olive oil, BrixCo maple syrup, thyme, salt, and pepper.
  3. Spread them on a parchment-lined baking sheet.
  4. Roast for 12–15 minutes, until tender but still slightly firm. (They will finish cooking on the tart.)

3. Prepare the Goat Cheese Spread

Mix together the goat cheese, yogurt (or sour cream), lemon zest, salt, and pepper until smooth and spreadable.

4. Assemble the Tart

  1. Place the puff pastry on a parchment-lined baking sheet.
  2. Using a knife, lightly score a 2 cm (¾-inch) border around the edge without cutting all the way through. This allows the border to puff up during baking.
  3. Spread the goat cheese mixture evenly inside the border.
  4. Arrange the roasted carrots in neat, parallel rows.
  5. Brush the pastry border with the egg wash.

5. Bake

Bake for 22–28 minutes, or until the pastry is deeply golden, crisp, and flaky.

6. Finish

Sprinkle with the maple-glazed pecans, if using (highly recommended for added crunch).

Garnish with a few fresh thyme leaves.

Just before serving, drizzle lightly with BrixCo maple syrup for a glossy finish and an extra touch of warmth.
